  • Agave sap (Aguamiel) had a thermoprotective effect in the spray drying process.

  • Microcapsules containing phenolic compounds with agave sap had the highest storage stability.

  • The stability of colour in the dehydrated xoconostle pulp is increased by the addition of the agave sap (aguamiel).
